Not every stollen is the real thing!
Don't be confused - only a few products are actually allowed to carry the title "Genuine Dresden Christmas Stollen". These have to originate mainly from the Saxonian capital or the immediate surroundings of this capital. Therefore, besides Dresden, this also includes Radebeul, Radeburg, Coswig, Moritzburg, Weinböhla, Radeberg, Heidenau, Arnsdorf, Ottendorf-Okrilla, Pirna, Wachau and Freital.
But the recipe must also be right. Only those bakeries from the region that use the original basic recipe, with the original ingredients and the proportions of the goods to each other, produce the "real thing". In addition to flour, water and yeast, a lot of butter, almonds (sweet and bitter), candied orange and lemon peel and the delicious sultanas are needed.
By the way, you can easily tell whether a Stollen is really an original from Dresden by the golden seal of quality. This seal is awarded by the Dresden Stollen Protection Association, to which our bakery belongs. Only then the product meets the strict requirements. Even if Stollen is a buttery-sweet affair today, as I said before, this was not always the case in the past. Originally the cake was intended for Lent and therefore consisted only of flour, water and yeast. It was first mentioned in 1474.
However, due to a request of the Saxon elector the pope issued the so-called "Butterbrief" (butter letter) by allowing other, much more delicious ingredients - including butter, which is so important for stollen. From this history Stollen developed to a royal pastry in Saxony. August the Strong, for example, was a great fan and also arranged the first Stollen Festival in Dresden.
