It was probably the Persians who first made a wonderfully sweet mass from peeled and blanched almonds together with sugar. This recipe found its way to the Iberian Peninsula in the Middle Ages together with the Moorish conquerors. From Spain, the sweet quickly spread throughout Europe and was very popular everywhere.  

By the way, it was used for many different purposes. Marzipan can not only boast to have been a confectionery, but also to have been used as a remedy against constipation or as an artistic modelling material. However, since almonds were very expensive as a basic product, marzipan remained a luxury commodity. So the way to Stollen, the royal pastry, was not far away. In the 17th century the two delicacies were finally found. Since then, it has been impossible to imagine life without the marzipan stollen.

What wants to call itself Marzipan Stollen must first prove that at least 5% of the dough weight is marzipan raw mass. These are incorporated in juicy pieces. In addition, delicious rum sultanas and the traditional mixture of spices are also traditionally included in the cake.
