Striezel vs. Stollen?
Originally, both terms actually referred to one and the same thing: an elongated yeast pastry. The term "Striezel" was actually even more common in Middle High German. Today, however, it is no longer common beyond the Dresden region.
Nevertheless, not only differences in the name can be discovered. The Striezel also has a few other details in its shape. First and foremost, it lacks the thick, white layer of icing sugar that imitates the wrapped baby Jesus. Instead, he has a blanket of delicious sprinkles on top. The dough and its filling usually corresponds to the normal stollen.
That is why it is called Striezelmarkt
When you know that the Striezel is also just a kind of stollen, it quickly becomes clear why Dresden's Christmas market is also called the Striezelmarkt. After all, the event, which has been held since 1434, was intended to enable regional bakers to offer their Striezel and Stollen for sale every year at Dresden's Altmarkt. In order to stand out from the crowd, the sweet craftsmen had to constantly come up with new tricks. Our good fortune - because this was the only way to create the many delicious varieties of Christmas biscuits!

The special thing about it is that the poppy seeds are ground just before baking, which makes the aroma much more intense.
Our poppy seed stollen is just as aromatic. However, it is made differently. While the Striezel is wrapped flat and covered with funny crumbles, we bake our Poppy Seed Stollen in a box mould. This is how the classic two croissants are made when cut.
